Head-on Shell-on Shrimp (HOSO)
Description
HOSO shrimp is in its natural, purest form, taken directly from the ponds. It is instantly frozen for raw orders, or cooked and later frozen, before finally being shipped. HOSO can be frozen in IQF, Brine IQF, and Blocks.
HOSO is available in the following sizes:
10/20, 20/30, 30/40, 40/50, 50/60, 60/70, 80/100.
And available in the following colors:
A1, A2, A3, A4, A4+ (Live Frozen)
HOSO sizes refer to the amount of pieces found in one (1) kilo of product.
Color grading in shrimp goes from lightest (A1) to darkest and richest (A4).

Additional information
| Raw | Minimal processing, frozen directly to be shipped. |

| Blanched | Minimally cooked, for later finishing. Ideal for food service. |
| Live Frozen | Special new development where shrimp is either frozen or cooked while still alive, thus retaining fantastic color and quality. This is considered the crown jewel in terms of quality for Ecuadorian shrimp. |
| Brine Frozen | This process involves the use of salt while freezing, giving the product its recognizable white sheen. |
